I could literally face plant into this dish. Sadly, I only got to steal a few pieces because it was a snack for my girls. They actually licked the plate when the apples were gone. (I promise I try hard to teach them to be ladies!)
The best part about this recipe isn’t even that it’s healthy and delicious…it’s so easy your child could make it themselves. Yup. So simple!!
The healthy fats from the coconut oil and coconut butter along with the fat and protein from the nut butter help make this a little more stick to the ribs than just an apple. Add some chocolate and almost any kid would devour it. Adults beware, you’ll want to eat the whole plate.
- 1 organic apple, sliced (always buy organic check the dirty dozen list)
- 2 TB coconut butter (also called coconut manna, I make my own)
- 2-3 tsp Enjoy Life Chocolate chips
- 1 tsp coconut oil
- 2 TB nut butter of choice (I used cashew but any kind works)
Arrange sliced apple on a plate. In a microwave safe bowl add coconut butter, coconut oil and chocolate chips. Heat in increments of 15 seconds, stirring to combine until liquid and mixed, set aside. In a separate bowl heat nut butter for about 10 seconds. Drizzle with a spoon over apples. Then drizzle melted chocolate over apples. Place the plate in the refrigerator for about a min until the chocolate hardens up. It doesn’t take long. Place on table and watch it disappear.
