Paleo Green Scrambled Eggs 

Simple. Fast. Delicious. Nutritious. Filling. 

Yep that’s about the shortest description you’ll probably ever hear on this blog for a recipe.  Here’s how to make them…

 Take about a half cup frozen chopped spinach and rinse under warm water to thaw it.  

  Crack two free range, large eggs into a small blender like a nutri-bullet, ninja or magic bullet. If you don’t have one a large blender, food processor or immersion blender would work too.  


Add the spinach to the cup and about a tsp of all purpose seasoning, such as Trader Joes 21 seasoning salute, and 1/4 tsp sea salt. 


Blend until smooth about 15-20 seconds.  Cook over med/high heat with cooking fat of your choice.  I love ghee or coconut oil with my eggs. 


The finished product!  With some Paleo pancakes because yum.
