Paleo Nut Free Energy Bites
 I’ve been aching for a sweet treat lately but have been holding strong.  We went to a grad party yesterday and everyone else was going to town on the cake, 8 flavors!!   Six months ago I would have too.  I’ve since overhauled my whole diet and although the cake looked and smelled good, you couldn’t pay me enough to eat it anymore.  Non-paleo is my enemy! The achy joints, the headaches, the acne, the gut distress all of it!  I’ll stick to my veggies please.  I even packed my own salad dressing and stuck the bottle in a ziploc bag in my purse.  Odd….maybe, but I didn’t really care because I didn’t have a reaction that way. 

I have to admit though that I made these bites  mostly for girlies. They need nut free snacks at school and I refuse to buy them anything with gluten or junk in it.  I’ll usually pack them things like dried fruit and homemade organic popcorn I pop in coconut oil, or spelt pretzels.  They aren’t strict paleo like I am but I do make sure their diet is free of junk. When I made these bites the first time I wasn’t sure if they’d like them because they aren’t overly sweet and have a decent amount of seeds in them.  I was stoked when they devoured them and thought they were like cookies and wanted more.  I secretly wished I could’ve had them all for myself but I’ll share. 😉

When I ran across these little bites on Crave by Taylor’s blog I made them instantly but with a tiny bit of tweaking. They’re really good!  Then I remade them last night with more changes and they’re even better!  

My only regret with these is that I hadn’t found the original recipe and recreated them sooner!  The recipe is versatile so if you don’t have or can’t find things like hemp seeds then use sesame seeds for example. 


top left: hemp seeds/hearts, top right: raw pumpkin seeds (I buy in bulk and store them in old glass jars then use a sharpie to write on it), middle: sunflower seed butter (i like this brand but theres many good brands out there), bottom left: shredded coconut (Bobs red mill is a good fairly inexpensive brand and I like to store it like this to keep it fresh), bottom right: freeze dried blueberries from Trader Joes
I use my mini food processor to make these little balls of goodness and it works perfect. A larger one would work well too. 

Step one: run the dates through the food processor until they look similar to this…

Step two: add sunflower seed butter, hemp seeds/hearts, chia seeds, vanilla, coconut flour, and coconut oil. Process until mostly smooth.

Next add in shredded coconut and process again until mixed in.  Then add in remaining ingredients and stir with a spoon. Do NOT process with food processor. You can scoop into a bowl and stir to make it a little easier but I hate doing dishes so I just stir right in there.

Roll into balls about 2 Tb in size and place on a plate in the fridge to harden.  Once firm, store in an airtight container in the fridge.

Devour!!  Or act like a civilized human being and eat only a few bites at a time and savor the flavor.

  • 6 pitted medjool dates 
  • 1/2 c sunflower seed butter 
  • 3 Tb chia seeds 
  • 2 Tb hemp seeds 
  • 1Tb coconut flour
  • 1 Tb coconut oil 
  • 1 tsp vanilla extract 
  • 1/2 c unsweetened shredded coconut 
  • 3 Tb freeze dried blueberries (or sub dried cranberries)
  • 3 Tb raw pumpkin seeds 
  • 2 Tb enjoy life mini chips
