Paleo Pesto Antipasto Skewers


Guys, seriously, it doesn’t get any easier than this! So easy in fact that my 6 year old daughter made these! Yup. No excuses for not having time or abilities. This maybe took 5 minutes to throw together. The ingredients are inexpensive and can make a big impact on a simple salad or as an appetizer dish.

These can be customized to what you have on hand. Feel free to add in some folded salami or pastrami, and if you do dairy some raw mozzarella would be good! Change up the types of olives if you’d like and even add a few leaves of fresh basil.

You can easily make these AIP (autoimmune paleo) by omitting the mild peppers, tomatoes, black pepper and be sure to use an AIP friendly pesto.

•canned artichoke hearts packed in water
•grape tomatoes (organic)
•kalamata olives
•green olives
For the dressing
•1 Tb chopped mild bell peppers from a jar (be sure not to buy the ones with added colors)
•1Tb pesto
•1 Tb red wine vinegar
•2 Tb extra virgin olive oil
•Salt and pepper to taste
Double dressing ingredients if making more than the amount of skewers shown in the pic above.

Ok this is where it gets tricky (totally joking). Thread the olives, tomatoes and artichoke hearts onto the skewers and place on a deep plate or platter. Whisk ingredients for dressing until emulsified (aka until creamy) and pour over the skewers. Then let marinate for a few hours in the fridge. Serve alone or on a bed of lettuce with balsamic vinaigrette.
